With apologies for the single-mindedness of this blog of late (I promise I’ll post about something besides Thai food soon!), stop what you’re doing and make this simple khai jiao, a fluffy, layered, crisp-edged Thai omelet, as described on She Simmers, one of the clearest and most informative resources for Thai recipes online. Serve over warm jasmine rice. Douse it with Thai Sriracha, as the author suggests, or do as I did and sprinkle it with a to-taste mixture of lime juice, fish sauce, grated palm sugar, water, cilantro, and snipped Thai chiles. One of these omelets, split between a kid and an adult, makes a very filling, satisfying breakfast.
